Of course, you could always go to New Voyages, a fan effort to fill in the last two years of the 5 year mission with an Elvis impersonator playing Kirk (picture a young Bruce Campbell playing Kirk).

Actually, what I've seen of the previews look really good for a fan production. I'll have to download the full episodes and give them a watch.
